Harissa Baked Aubergine

This dish is a really lovely main course that will impress everyone. The aubergine is baked in a harissa sauce until soft and then served with hummus and pine nuts.

Ingredients, serves 2
1 aubergine halved
250 ml passata
150 ml water
1-2 tablespoons harissa paste
1 sprinkling of toasted pine nuts
2 tablespoons of hummus to serve

Method
Cut the aubergine in half and place in a small roasting tin, a loaf tin is perfect. Add a drizzle of oil and season. Roast for 15 minutes at 200c fan assisted.
Add a tablespoon of oil to a saucepan and heat up with the passata, water and harissa paste. Simmer for 5 minutes.
After roasting the aubergine for 15 minutes, take out of the oven, pour the harissa and passata sauce on top and roast for a further 30 minutes.
To serve, spread a tablespoon of hummus on each plate, place one half of the aubergine on top. Spoon over any sauce that remains in the baking tin and sprinkle over the toasted pine nuts.
This is quite a light meal. If you want to make is more substantial it is nice served with grains and either a salad or cooked veggies.
