This pizza is so moreish and nicer than any regular pizza I have ever had, honest. It’s tangy, tasty, spicy – basically full of flavour and also really juicy. You really don’t need cheese!
Ingredients, makes 2 pizzas
Ready made vegan pizza bases, 27 cm
50 grams raw almonds, blanched
225 grams of cherry tomatoes
1 garlic clove
1-2 chillies, stalks removed
1 bunch of basil
Half a teaspoon of salt
Juice of half a lemon
2 large tomatoes
Optional, yeast flakes to serve
Method
Place the almonds in a cup of boiled water for around 20 minutes.
When the almonds are ready, place everything apart from the large tomatoes and a few basil leaves in a food processor. Whizz up until all ingredients are finely chopped and pesto like.
Spoon 3 heaped tablespoons of pesto onto each pizza base and spread evenly.
Slice up the tomatoes thinly, about a quarter of a cm think. Spread on top of the pizza in a single layer, covering the pizza with no gaps. Place in the oven and bake as per pizza base instructions.
To serve, sprinkle over yeast flakes and retained basil leaves. Enjoy!
