Vegan Noodle Salad

This salad is quick, tasty, healthy, raw and so addictive! You can use whatever veg you have in the fridge and create a fresh and delicious lunch or dinner

Ingredients, serves 2.
2 rice noodle portions
3 tablespoons of soya sauce
3 tablespoons of sesame oil
1 lemon, juiced
1 cm of fresh ginger, crushed in a pestle and mortar or grated
Half a garlic clove, crushed in a pestle and mortar or grated
3 large handful of any raw veg, sliced finely. You can use any veg that can be eaten raw.
Handful of roasted peanuts, crushed


Cook the noodles as per instructions and place to one side.
Mix together the soya sauce, oil, lemon juice, ginger and garlic.
Place the cooked noodles, veg and dressing in a large bowl and toss together. Sprinkle the peanuts on top and serve. So easy!
