It’s fantastic when you make a soup from leftover veggies and it tastes as good as it looks. When it ends up just tasting bland though, this spice mix is great for a quick rescue. It really does work every time too!
2 tablespoons oil
4 garlic cloves, finely chopped
3 quarters of a teaspoon of cumin seeds
3 tablespoons of passata
Half a teaspoon of red chilli powder
Quarter of a teaspoon of turmeric
1 teaspoon of coriander powder
Half a teaspoon of garam masala
1-2 teaspoons of salt to taste and/or some lemon juice
Heat the oil in a pan and add the garlic and cumin seeds. Turn the heat down and stir around until the seeds start to toast. They will change colour and become fragrant very quickly so be careful not to burn them.
Quickly add the passata and spices and stir through again until everything is incorporated and heated through. Add into your pot of soup and stir in whilst warming everything through together.
Add salt to taste and serve up! You could also add lemon juice if it goes well with your soup.
