Vegan Anzac Biscuits

These biscuits are really addictive and you cannot stop at one.  This recipe is based on one from BBC Goodfood magazine that I made vegan.

Ingredients, makes 20 biscuits 

85 grams porridge oats

85 grams dessicated coconut

100 grams plain flour

100 grams caster sugar

125 grams vegan margarine

2 tablespoons golden syrup

Half a level teaspoon of bicarbonate of soda


Method

Preheat the oven to 180 degrees.

Mix the oats, coconut, flour and sugar in a bowl.

Melt the margarine in a saucepan or microwave.  Stir in the golden syrup.

Add the bicarbonate of soda to two tablespoons of boiling water before stirring into the margarine and golden syrup mixture.

Incorporate the dry and wet ingredients by stirring and folding together.

When incorported, form the dough into 20 flattened balls that are pressed down to no more than a cm thick.  Place them on a baking sheet about an inch apart and then place in the oven.  They should take about 10 minutes to bake from start to finish, or until golden.  Let them cool completely before eating if you can!
