This is a lovely warming sweet treat, basically an apple pie in a crepe. The crepes are made using just two ingredients and the filing is made in one pot. With the cinnamon sugar sprinkled on top it is perfect on a cold day.
Ingredients, crepes makes 4
175g plain flour
325ml almond milk
Filling
1 tablespoon caster sugar
2 teaspoons ground cinnamon
500 grams apples, peeled and cored, cut into small chunks
3 tablespoons maple syrup
Method, filling
Mix the sugar and 1 teaspoon of cinnamon together, put to one side.
Mix the rest of the ingredients together in a saucepan and cook over a medium heat for 10 minutes or until the apple is cooked. Keep an eye on the filling, stirring regularly. When cooked, put to one side and prepare the crepes.
Crepes
Whisk the milk into the flour, pouring the milk in a bit at a time. This will prevent lumps.
Heat some oil in a non stick frying pan on a medium heat. When is is nice and hot add a ladle of batter into the middle of the pan and tip the pan so that the batter spreads and covers as much of the pan as possible. Fry until the underside is golden brown and then flip over to lightly brown the other side. For me it takes 2 minutes on the first side and then 1 minute on the second side. Repeat until all the batter is gone.
Divide the filling amongst the crepes and roll up. Sprinkle the cinnamon sugar on top and serve with ice cream.
