Although not strictly a traditional Christmas cake, anything can look festive with holly on top! This is a really fudgey and rich chocolate loaf. If you have a really sweet tooth, I would add icing or drizzle chocolate on top for extra sweetness.
Ingredients
200 grams plain flour
200 grams caster sugar
80 grams cocoa powder
1 tsp bicarbonate of soda
Half a teaspoon salt
5 tablespoons vegetable oil
1 teaspoon white wine vinegar
1 teaspoon vanilla extract
250 ml water
150 grams raw courgette, grated
Method
Preheat the oven to 180 degrees and line a loaf tin.
Combine all of the dry ingredients in a bowl.
Mix all the liquid ingredients in a jug and mix well.
Combine the wet and dry ingredients, grate in the courgette and mix together to form a batter.
Pour the batter into the loaf tin and bake for 40-50 minutes or until the skewer comes out clean.
Once baked, leave to cool in the tin before slicing up.

Courgette that is not cooked is then grated or sliced finely.
Can i skip courgette
It actually makes the cake really moist. You wont taste it honestly!
