Vegan Garlic Mushrooms

This is the easiest recipe ever, only 5 ingredients and makes a great starter or side dish.  I came across this recipe through Hello Fresh.  The mushrooms are crunchy, juicy, soft, garlicky and comforting.

Ingredients, serves 2

4 portobello mushrooms

5 tablespoons of flat leaf parsley, finely chopped, leaves only

4 garlic cloves grated

1.5 tablespoons of  vegan margarine

5 tablespoons of panko breadcrumbs


Preheat the oven to 200 degrees.

Take out the stalks of the mushrooms and place them on a baking tray.

Melt the margarine and stir in the rest of the ingredients. Season with salt and pepper before piling onto the mushrooms.

Bake in the oven for about 15 minutes or until the tops are browned.  Serve up and be amazed at how great they taste!
