I can’t believe I’m only just getting around to posting a choc chunk cookie recipe. This one is foolproof. The cookies are gooey, soft, crunchy and satisfying.
100 grams vegan margarine
100 grams light brown sugar
1 tablespoon golden syrup
150 grams self raising flour
60 grams vegan chocolate, broken up in 1cm chunks
Preheat the oven to 180 degrees.
Roughly chop up the chocolate into 1cm chunks.
Cream together the butter and sugar before beating in the golden syrup.
Slowly, incorporate the flour, finishing by hand to form a soft dough.
Mix the chocolate into the dough.
Form the dough into 14 balls and place onto a lined baking tray, spaced well apart.
Bake for approximately 12 minutes or until golden brown. Remove from oven and leave to cool.
