This is a really fresh, easy yet tasty noodle dish for lunch or dinner. Ready in minutes with minimal prep required. You will be transported to the streets of Thailand.
Ingredients, serves 2
1-2 fresh chillies, sliced.
2 portions of rice or glass noodles
100 grams cashew nuts
1 tablespoon oil
2 tablespoons brown sugar
3 tablespoons soy sauce
4 spring onions, sliced
2 large tomatoes, chopped
Small bunch of fresh coriander, chopped.
Cook the noodles and then drain before setting to one side.
Toast the cashews in a dry pan until browned. You will need to keep them moving in the pan so they do not burn. Take them out when toasted and put them to one side.
Heat the oil in the pan and add the chillies. Fry for a few moments, until they start to sizzle and then add the soy sauce and sugar.
Stir through for a few moments before adding the noodles, cashews, tomatoes and stir through until everything is mixed together.
Take off the heat and toss in the coriander and spring onions.
Season to taste with salt, pepper and lime.
