Ever feel like you should be eating more raw kale? Look no further, this salad will make you love kale. It is a satisfying bowl of crunchy, creamy, tangy and peanutty flavours.
Ingredients, serves 2 as a side dish
100g kale unprepared
1 large ripe avocado
1 tablespoon maple syrup
2 tablespoons white wine vinegar
1 handful of salted peanuts, lightly crushed
Method
Remove the tough stalks from the middle of the kale and finely shred the remaining leaves. Put these in a bowl.
Remove the skin and stone from the avocado and mix it in with the kale with your hands. This is your creamy dressing so you want to make sure that all the kale is coated. Add the vinegar and maple syrup, mix together well. Add the peanuts and serve. Bon appetite!
If you have a peanut allergy you could substitute for pumpkin and sunflower seeds, lightly roasted and salted.
