Everyone loves flapjacks and these are great for lunchboxes, picnics or just with a cup of tea! I made sure the finished product was soft, satisfying and most importantly – travelled well. Who wants to open their lunchbox to find a load of crumbs?
Ingredients -14 pieces
175 grams vegan margarine
125 grams light brown sugar
3 tablespoons golden syrup
300 grams porridge oats
1 handful of raisins
Optional, vegan chocolate to drizzle on top
Method
Preheat the oven to 180 degrees
Line a 28x17cm (approx) baking tray with baking parchment.
Melt the margarine, sugar and syrup in a pan. Do not bring it to boil.
Mix well with the oats and raisins.
Pour into the baking tray, pressing the mixture down with a fork.
Bake for approx 30 minutes or until golden brown. Best to check after 20 minutes.
Let the flapjacks cool for a few minutes before cutting them into squares whilst they are still in the tray. Turn out from the tray when they have cooled completely.
Drizzle the cooled flapjacks with melted chocolate if using. Enjoy!
