Kids Favourite Sweet Potato and Chickpea Curry

This is a super easy curry that is kid friendly but can be cooked for the whole family.  My two kids love it and it is so great to be able to cook something that pleases everyone.

Ingredients, serves 2 adults and two kids or 3 adults.

1 inch of ginger, finely sliced

2 garlic cloves, finely sliced

1tsp black mustard seeds

1 tin chickpeas (drained)

250 grams sweet potato, chopped into half inch cubes

Half a tsp garam masala

Half a tsp ground coriander

Half a tsp turmeric

1 can coconut milk

250 ml passata

Method

Heat up 2 tbsp of oil in a saucepan on a medium heat.  Fry the garlic, ginger and mustard seeds until the garlic starts to colour, about 1 minute.

Add the sweet potato, chickpeas and spices.  Lower the heat and mix together for about 1 minute.  Add the coconut milk and passata and bring to the boil, stirring together well.

Lower the heat and simmer uncovered for about 30-40 minutes or until the potatoes are cooked through.  The curry should thicken up.  Add a splash of water if it becomes too thick.

That’s it, add a squeeze of lemon if required and serve with rice!  For the adults I usually sprinkle some chopped chilli on top and some coriander. Enjoy!
