This is a super quick and tasty starter. It is a simplified version of a classic Chinese dish but I think the result is just as delicious.
Ingredients, serves 4 as a starter
1 litre vegetable stock
1 inch of ginger, peeled and crushed in a pestle and mortar
2 chillies, sliced
300 grams mushrooms, sliced
1 tsp rice wine
4 tbsp soy sauce
3 tbsp balsamic vinegar
1/2 spring onions, sliced
Coriander to serve
Method
Bring the stock to the boil.
Add all the ingredients apart from the spring onions and coriander.
Simmer for 10 minutes
Add the spring onions.
Serve immediately and sprinkle with chopped coriander to serve. You could also add tofu with the mushrooms if you wish.
