DIY Baked Beans

This is a really simple lunch or side dish that is cooked in one pot. It is healthy, comforting and really tasty.

Ingredients, serves 4
2 tablespoons oil
1 onion, finely chopped
1 carrot, finely chopped
2 cans of any white beans
1 large tomato, finely chopped
1 teaspoon smoked paprika
1 teaspoon chilli powder
1 teaspoon English mustard
1 teaspoon jam, any flavour
1 teaspoon onion salt
2 tablespoons apple cider vinegar

Heat the oil in a pan on a medium heat. Add the onion and carrot and cook on a low heat for 10 minutes, until the vegetable become soft.

Add the beans with the liquid from the can. Turn the hob up to a medium and add the tomato, paprika, chilli, mustard, jam and onion salt.

Bring up to a simmer, then turn the heat down and leave to cook through for 10 minutes, stirring occasionally. Stir in the vinegar and let it simmer for another 10 minutes.

This mixture should have thickened after this time. Serve immediately and season to taste. You might want to stir through another tablespoon of vinegar before you serve.
