Easy Chilli Marmalade Tofu

This is a great recipe if you are short on time as it tastes fantastic but is really quick to make. It gives you a sweet, tangy chilli hit which I love.

Ingredients, serves 2

300 grams firm tofu cut into cubes
3 cloves of garlic, peeled
2cm of ginger, peeled
1 fresh chilli, chopped
2 tablespoons of marmalade, (flattish not heaped spoonfuls)
3 tablespoons of soy sauce
1 courgette, sliced into rounds and then semi circles
Rice or noodles, sesame seeds to serve.

Method

Cook your rice or noodles as per packet instructions. Fry the tofu in 2 tbsp of oil until crispy. Remove from the frying pan.

Mash up the ginger and garlic in a pestle and mortar.

Mix together the marmalade and soy sauce in a separate bowl and whisk together.

Add 1 tbsp of oil to the pan on a medium heat. Add the chilli, ginger and garlic and fry until they start to brown. This should take about 2 minutes.

Turn the heat down, add the tofu, marmalade, soy sauce, 4 tbsp of water and courgette and mix together well. Turn the heat back up to medium and fry until the courgette is cooked and the sauce thickens. This will not take long, maybe 3-4 minutes.

Serve straight away with rice or noodles and a sprinkling of sesame seeds. Enjoy.
