This is a great dish to make when you can’t be bothered to cook but want something tasty and healthy.
Ingredients, serves 2
1 cup red lentils
2 garlic cloves, peeled and finely chopped
2 slices peeled fresh ginger, 1 inch
Fresh coriander, chopped
Half teaspoon ground turmeric
Half teaspoon cayenne pepper
1 teaspoon salt
Lemon
Vegatable oil
1 teaspoon whole cumin
1 white onion, sliced into rings and fried
Method
Clean the lentils thoroughly. Put them in a heavy bottomed pan with 3.5 cups of water and bring to the boil. Remove the froth that collects on the top.
Add the garlic, ginger, tumeric and cayenne pepper. Cover leaving lid ajar and simmer gently for about 1.5 hours. Stir occasionally.
When cooked add salt and juice of half a lemon.
Add 2 tablespoons of vegetable oil into a separate frying pan. When it is hot fry the onion rings. Take them out when they are browned and put them to one side.
Add another 2 tablespoons of oil to the same frying pan and add the cumin seeds. Once they are darker and fragrant they are done. This only takes seconds. Add the oil and seeds to the dhal and stir through. Serve immediately with the onion rings and coriander sprinkled on top. I like to have a lemon wedge served on the side for extra sharpness.
