Golden Cauliflower Rice

This is the easiest recipe ever.  I can’t believe that I am just getting around to posting this now.  Cauliflower rice is a low carb and healthy alternative to rice and is delicious in its own right.  Baking cauliflower with turmeric brings out its earthy flavour.  You can use this recipe as a base and add whatever else you fancy to the baking tray, eg. a handful of cashews or flaked almonds.

Recipe, serves 2.

Half a large cauliflower

Half a level teaspoon of turmeric

Half a teaspoon of sugar and salt


Heat the oven to 200 Celsius

Grate the cauliflower into a baking tray

Mix in the turmeric well. Be careful not too add too much as it is a very strong taste.  Half a level teaspoon is plenty.

Mix in the sugar and salt and bake in the oven for 30 minutes.

Check after 15 minutes and mix around.

Keep a close eye on it to make sure it does not burn.

When it comes out it is ready to serve.  Season to taste and  enjoy.
