This is a 10 minute dish that is great to serve as a light lunch or side. It is made with flattened flaked rice which you can buy online or at Indian shops or supermarkets. It has a soft texture that really soaks up all the tangy/sweet flavours in the dish. If you give it a go it will become a staple I am sure.
Ingredients, serves 2
4 handfuls of flaked rice
4 tablespoons of any neutral oil
1 level teaspoon cumin seeds
1 chilli, dry or fresh, chopped, amount to taste
1 red onion, finely chopped
Half a red bell pepper, finely shopped
1 handful of cashew nuts
1.5 level teaspoon salt
1.5 level teaspoon turmeric
2 level teaspoons sugar
Juice of half a lemon
3 stalks of coriander, chopped
Method
Place the flaked rice in large bowl and add cold water so that all the rice is submerged. Fill to about a cm above the rice. Leave this to soak for 6 minutes and then transfer to a sieve. Leave this to drain. I have timed this to perfection! The rice flakes will be soft but still have some bite.
Heat 4 tablespoons of oil in a heavy bottomed pan on a medium heat. Add the cumin seeds and chilli. When the seeds start to sizzle add the onions and peppers and stirfry for a minute. Then add the cashews and stirfry for another minute.
Turn the heat down. Add the rice flakes, turmeric, salt and sugar and mix together until combined. Add the lemon juice and stir through before adding the coriander. When everything is combined and heated through it is ready to serve. This can be eaten hot or cold. Enjoy!
