This is a great dinner or weekend lunch dish to knock up. Really filling and tasty. Serve with a crisp salad to compliment the richness of the almonds.
Ingredients, serves 2
250 grams penne pasta
1 garlic clove, peeled
1 fresh chilli, stalk removed
50 grams almonds
250 grams cherry tomatoes
1 bunch of fresh basil
1 lemon
Method
Soak the almonds in boiled water for an hour and then discard the liquid.
Blend together the almonds, garlic, chilli, tomatoes and basil to desired consistency. I like the pesto with a bit of texture.
Squeeze in the juice of a lemon or to taste. I like to squeeze the whole lemon. Add a quarter of a teaspoon of salt or to taste.
Cook the pasta as per instructions, drain and mix with pesto. Serve up straight away with a drizzle of olive oil for a tasty lunch or supper.
