Vegan Paprika Rice

This is a really simple accompaniment to any mexican style dish and so tasty. I almost didn’t post this because I felt that it was too simple but my daughter persuaded me as it’s her favourite. You could even have it as part of a main course with some stir fried vegetables.

Ingredients, serves 4 as a side dish.

3 tablespoons oil
175g rice
1.5 teaspoons smoked paprika
1.5 teaspoons onion salt
3 handfuls of peas


Cook the rice. Heat the oil in a pan on a medium heat.
Add the rice to the pan and stir fry, adding the paprika and salt.
Add the peas and stir, serve as soon as everything is warmed through.
